Soaked Oatmeal


One of my favorite breakfasts is oatmeal, and now I've started soaking my oats since reading about the benefits of soaking whole grains.

The soaked oats cook more quickly and have a texture we prefer to unsoaked oats.

Soaked Oatmeal

For each serving, I combine

1/2 cup old fashioned oats,

1/2 cup warm water, and

1 Tablespoon plain or vanilla yogurt (and use kefir, buttermilk, lemon juice, or vinegar)

in a pan, cover, and leave it to soak 7-24 hours.

In the morning I add an additional 1/2 cup water per serving and simmer it over medium heat until it is the consistency I like.
